INGREDIENTS:
- • 1 CUP BROWN RICE FLOUR
- • 1/4 CUP NUT MILK (ANY KIND)
- • 1 RIPE BANANA (MASHED)
- • 1 TEASPOON BAKING POWDER
- • 3 TABLESPOONS CACAO POWDER
- • 1 TABLESPOON BIJA PLANT-BASED COLLAGEN
- • 2 TABLESPOONS DATE SYRUP
- • 1 TEASPOON VANILLA EXTRACT
INSTRUCTIONS:
- 1. IN A MEDIUM BOWL, BLEND WET INGREDIENTS (MILK, BANANA, DATE SYRUP, AND VANILLA EXTRACT) UNTIL SMOOTH. TRANSFER TO A LARGE BOWL.
- 2. IN A SEPARATE MEDIUM BOWL, WHISK TOGETHER REMAINING INGREDIENTS.
- 3. GRADUALLY FOLD THE DRY INGREDIENTS INTO THE WET MIX.
- 4. BRING A MEDIUM NONSTICK PAN TO MEDIUM HEAT AND POUR 1/4 CUP INCREMENTS OF BATTER INTO THE PAN, LEAVING SPACE TO FLIP.
- 5. AFTER 2-3 MINUTES OR UNTIL EDGES START TO LIFT, FLIP AND COOK FOR ANOTHER 2 MINUTES.
- 6. TRANSFER TO A PLATE AND GARNISH WITH FRUIT. SERVE WITH MAPLE SYRUP.
